Managing director of fast-food chain Leon, Stuart Fitzgerald, has been battling the effects of the pandemic on the hospitality sector for the last 15 months. But, during the call for this interview, the sound of pots banging and the hustle of bustle of a busy kitchen could be heard in the background.
