Knightbridge Capital is set to expand its food and hospitality offering in Ireland by acquiring The Rolling Stoves smash burger truck-and-trailer chain.  It is the latest move by the private-equity firm, which scooped up ice cream brand Scrumdiddly’s and the health food chain Freshly Chopped last year. Both chains were in financial difficulties and rescue proceedings at the time of those acquisitions.  Through Brown Bear Moves Limited, John Scanlan and Chris Beresford jumped on the global smash burger trend in 2021.
